  3. 300 g sucre cristallisé
  4. 170 g riz grain rond
  5. 200 g beurre
  6. 100 g sucre semoule

    1 heure 30minutes




    Moule à charlotte de 1,5 litre
  2. Versez le lait dans une casserole, ajoutez le sucre cristallisé et la vanille fendue et grattée, portez à ébullition.



    Versez le riz dans de l'eau bouillante, laissez-le  hors du feu pendant 2 à 3 minutes. Egouttez-le et mettez-le à cuire dans le lait bouillant. Comptez 1h 30 environ à partir de la reprise de l'ébullition et dès ce moment, baissez le feu, le tout doit frémir sans tumulte. Au bout de ce temps le riz à dû absorber tout le lait.
  3. Dans une petite casserole, préparez le caramel avec le sucre en poudre juste moullé d'eau froide, portez à feu doux, laissez cuire en remuent la casserole. Dès qu'il est d'un beau blond, retirez la casserole du feu, éteignez le caramel avec une cuillère à soupe d'eau ajoutée petit à petit. Laissez refroidir et versez-le dans le moule à charlotte en ayant bien soin d'en chemiser les parois.
  4. Lorsque le riz est cuit, retirez la gousse de vanille,  ajoutez le beurre par fractions, travaillez avec une spatule en bois pour l'incorporez complétement. Versez le riz dans le moule à charlotte.



    Mettez au réfrigérateur une nuit. Démoulez au moment de servir.
